The term supermarket itself describes the way your local grocery store has evolved into warehouse-sized mega markets. And with competition at an all-time high, these supermarkets are using every bit of new technology they can find to keep your loyalty and your dollars flowing.

It is not by accident that when you walk into most supermarkets, you begin in the produce section. There are two reasons for this. First, this section contains the most perishable items, so the store is looking to move these products the quickest.

Second, psychological studies have proven that if you start off choosing healthy items for yourself, you are more likely to allow yourself less nutritious items in other aisles. Also, light bulbs with a slightly bluish tone are used in the produce section, and the greens are frequently misted because this makes them appear more lush and desirable.

Even the music that is you think is simply background noise has been scientifically studied to increase your spending. The soundtrack most experts recommend is designed in such a way as to keep customers moving through the store at a slower pace. One study proved that music with a tempo below 72 beats per minute resulted in the average customer spending over 30 percent more than when the music was turned off.

Aromatherapy has long been used in grocery stores.

In the past, the scent of fresh flowers was used to mask less than pleasant odors such as the fish counter. Several recent studies have proven that the smell of fresh melons in the air resulted in a fourteen percent increase in spending. Other stores are currently testing different odors for different departments like the smell of bread baking for the bakery section and the scent of roses in the flower department for example.

The way the store is laid out is not accidental either. Most store owners know that their customers tend to buy at least one item from the dairy section when they are in the store. This is why you will find that most dairy sections are all the way in the back corner of the store. They are forcing you to walk through the entire store twice, so the odds are in their favor that you find at least one or two additional items before you leave. So hopefully the next time you go to the grocery store, you will keep these things in mind, stick to your list and save a little money.
