When it comes to vegetable root vegetables in particular nothing seems to beat roasting. Not only does it bring out the real flavor but enhances the taste that makes it so much more delectable. I remember growing up as a child my mother would boil broccoli and carrots would just not be that tasty. This simple Plant-based lifestyle recipe is exactly that it is simple. First, go to your local grocery store there are so many different varieties of carrots now. I noticed recently the multicolored carrots being organic and not for expensive which is a good thing.
Take your carrots clean them thoroughly most of the nutrients are in the skin so you brush them clean and well you don’t have to peel them. Next use a little Olive Oil or coconut oil and with a brush or your hands make sure they are covered then add a little bit of kosher salt and some fresh ground pepper Place on a baking dish and drizzle with a little bit of honey. Place in preheated oven at 375°F and let roast for 35 to 45 minutes. If you have macadamia nuts great, if not cashews or peanuts will also make a great substitute.
Cut the carrots in half. Then take a half a cup of nuts and give them a rough chop, do not put in a food processor a rough chop with a big knife will work fine. Place the carrots on a plate sprinkle the nuts on top garnish with parsley, and that’s it. It’s quick it’s easy it’s Protean and taste great.
